With the temperatures a bit cooler this past week, we've been on a bread baking kick around here. We still use our tried and true Oatmeal Bread Recipe, but instead of baking two loaves make one big one which tends to disappear in a day or two (there's sneaky Hugo stealing some before dinner). The kids like it much more than store bought bread and actually eat the crusts! It's a miracle!
To go along with our bread and some sauteed summer squash, we had what I on a whim named "Unbaked Ziti." It's not really ziti at all, but rather pasta with a nice cheesy tomato sauce. I've been trying to boost the protein content of everything, and it turned out quite tasty (and easy!).
You will need:
1 package of your favorite pasta
1 jar of your favotie tomato sauce
2 cups full fat cottage cheese
1 cup parmesan cheese
2 tablespoons of butter
some julienned basil from your garden
Cook the pasta, add remaining ingredients while still hot, heat until warmed through (and cottage cheese has melted) and you're done! Simple summer meals are my favorite.

Sounds so lovely--the cooler temps, a cute toddler sneaking bread, the beautiful wildflowers, and the filling pasta on a summer evening!
